Late in 2022, we started developing a workshop (which led to a Cuisine editorial) on the language of wine, tasting skills, proficiency in nomenclature and the aesthetic principles which are an intrinsic part of wine’s enjoyment. On a professional level, we have been training and teaching hospitality staff the systematic method of tasting wine for 15 years, but have always thought it too ‘technical’ and restrictive to be fit for purpose to enthusiasts and people who do not work in the industry.

Over the past couple of years, we’ve been persuaded that there is a way to to do both - to explain the science and technique behind objective wine tasting (both organoleptic and descriptive), while also engaging with the philosophy of taste, subjectivity and aesthetics. Thus, a new workshop was born, called The Language of Wine. To give both the practical/technical and philosophical sides of this enough room to develop, we have spread the workshop across two consecutive nights; Monday 21st and Tuesday 22nd of August. This is an intimate workshop with ample practical elements, plenty of tasting practice with not just classic examples but also interesting, challenging wines to describe, so seats are more restricted than usual. Be prepared to flex your tasting muscle, challenge your brain, and question your views of how taste works.

For the debut of this new workshop, Stephen Wong, our resident Master of Wine, will be leading the discussion. To facilitate lively debate and discourse, we also have Caitlin Perlman to challenge these theories and provide an alternative point of view where needed.
