Though the Jura, the tiny wine region nestled between the Burgundy to the West and Switzerland to the East, has been garnering acclaim for wines with more modern polish, it is the traditional styles that still epitomize the region. And in spite only account for approximately 22% of all plantings (nearly half the amount of Chardonnay, the most widely planted variety), those styles synonymous with the Jura are traditionally made of Savagnin. It is Savagnin which winemakers, even those strongly associated with ouille, are extending élevage time and encouraging biological aging under flor (known as ‘sous voile’ in the Jura). And, of course, Savagnin is the grape variety of the Jura’s most iconic wine, vin jaune.

On Monday, February 12, in addition to the classic oxydatif styles, we will also have expressions of Savagnin topped-up during élevage and even a sparkling (not a Crémant du Jura as it contains 100% Savagnin and 50% Chardonnay is required for the AOC). And of course, in addition to vin jaune, we will also serve Comté, the Jura’s other most famous export. 

The line-up of 8 wines may change slightly, but confirmed are: Domaine du Pélican Cuvée Brut S Zéro, 2017 Domain du Pélican Savagnin Ouillé, 2016 Buronfosse Varron Savagnin, 2020 Domaine des Marnes Blanches Aux Bois Savagnin, 2018 Domaine Jean-François Ganevat Les Grands Teppes Vieilles Vignes, 2018 Domaine André & Mireille Tissot Savagnin, and 2008 Domaine Bornard Arbois-Pupillin Vin Jaune. And, of course, Comté!
