Corks & Curds: Perfect Pairings

Regardless of holiday traditions, there is the common thread of indulgence that unites us as we head towards the close of the calendar year. In line with the extravagance of the season, the final Corks & Curds of 2022 will swerve a little left from the ultra-nerdy, and will instead focus on the inherent comfort and moorishness that perfect cheese pairings can provoke. And with the festive season looming, what better match to crack than cheese and sparkling wine?

In the attempt to find the perfect sparkling wine and cheese pairing, we will be moving away from reductive orthodoxy of prescribed food and wine matching. Instead we will be running this session as a workshop including wine, cheese, and accoutrements to allow for some trial and error. Six cheeses of varying styles will be served along with four sparkling wines. To coax the most delicious mouthfuls, there will be an assortment of classic cheese plate heroes including cured meats, preserves, and other treats.

While the cheeses cannot be completely finalized until closer to the date, expect to try an array of styles including triple crèmes, Loire inspire NZ-made goats cheese and a regional Champagne washed rind. The wines being tasted are: Lahert Frères Rosé de Meunier Extra Brut Champagne NV, Black Estate Damsteep Pet-Nat 2022, Tissot Indigène Crémant du Jura, and Renardat-Fâche Bugey Cerdon 2019.

This is all about having fun and experimenting. Whether you are a full flung curd nerd or just looking for perfect holiday cheese board ideas - all are welcome!
